Chocolate cake for friends

About two years ago I made a chocolate cake for Monique’s birthday party. I decorated it with home-made truffles. Don’t remember exactly which flavours I made but I think they were orange, coffee and marzipan. (watch out for the truffle recipe… will be coming in the near future…) Anyway….the cake turned out very well (except for some minor things other people probably didn’t notice). I was especially happy with the chocolate glaze which was very smooth.
A couple of weeks ago we were invited to diner by Adam & Cristina. Since they both like (making) chocolate desserts I made the chocolate cake again. The cake recipe is for quiet a large cake so I only used half the ingredients and used a smaller baking pan. Made the cake using chocolate with candied orange peel, gives a nice additional taste. No truffles for decoration but gold leaf instead. Haven’t tasted this cake but A&C assured me it was good! Unfortunately don’t have a picture of the cake but do have another one with a chocolate glaze cake with gold leaf.

The cake is not too hard to make but take into account that making it will be quite time-consuming. The cake needs to cool down prior to adding the glaze and the glaze has to firm up.
What I especially like about this cake is that the top (or the bottom since the cake is turned up-side down after cooling) is very flat. It might not look like it’s going to be when you see it in de oven (rising and cracking of the top) but once it cools down and it’s turned, it is very flat. Looks nice with the glaze! If you want to impress with your baking skills, this is the cake to make….

Chocolate hazelnut cake (from: Ultimate Chocolate, Patricia Lousada)

For the cake:
90 g (3 oz) hazelnuts, roasted and without skin
140 g (5 oz) caster sugar
180 g (6-1/2 oz) butter, at room temperature, cut in small pieces
180 g (6-1/2 oz) bitter chocolate (min 70 % cocoa content), chopped
4 eggs, seperated
30 g (1 oz) flour
dash of salt
dash of cream of tartar

For the chocolate glaze:
180 g (6-1/2 oz) bitter chocolate (min 70 % cocoa content), chopped
125 g (4-1/2 oz) butter, at room temperature, cut in small pieces
1 tbs sugar syrup

(I converted grams for oz, they were rounded off to the nearest half oz)

Grease a 23 cm (9 inch) springform cake pan and cover the bottom with baking paper. Preheat the oven at 190ºC (375ºF).
Process the hazelnuts with 2 tbs of the sugar. Melt butter and chocolate (for the cake) au bain marie.
Beat the eggyolks with 90 g (3 oz) of the sugar until their color is light. Combine with the warm chocolate mixture. Fold in flour, salt and hazelnuts.
Beat the egg whites with the cream of tartar until soft peaks form. Add the remaining sugar and continue to beat until stiff.
Fold a big spoon of the egg white in the chocolate mixture to make it airy. Fold in the remaining egg white. Spoon the mixture in the prepaired pan and bake the cake for 35-40 minutes. The center of the cake should remain moist. Cool the cake on a rack. After cooling put it bottom-side up on the rack. Put a plate bigger than the cake underneath.
Melt the chocolate, butter and syrup for the chocolate glaze. Pour a little bit over the cake and spread it out in order to fixate the crumbs. Pour the rest of the glaze over the cake, helping it going down the sides by carefully tilting the cake a little bit.

Add your own decoration, eg truffles (home-made or store-bought), nuts, chocolate curls
