Another late Daring Baker challenge…
This month’s challenge was to make puff pastry and make some vols au vent with it. Even though there’s no picture of the vol au vents I did make them but they didn’t rise very well. Maybe the fact that I didn’t chill the dough prior to baking contributed to that. I didn’t make any pictures because I wanted to redo them. So a couple of days later I tried them again but I failed to flour the dough well enough The dough sticked to the surface and I wasn’t able to transfer the dough well enough to the baking sheet. The bottom disks were ok enough so I baked them but they ended up a bit oily and the layers where sort of sealed at the cutmarks. Maybe because I didn’t use cookie cutters but a round ring that was somewhat thicker. I didn’t think the disks were good enough to use so again no picture. Good thing I made some of these bite-size palmiers. Easy to make and delicious ๐
Still have 2 portions of the puff pastry in the freezer, hope next time I make something with them it will turn out better. And if not, I’ll have to practice making more puff pastry ๐

Don’t worry about the vols-au-vent, your bite size palmiers are adorable and look extra crunchy, just as I like them!

You know…you’re brave. When I looked at some of the vol au vents, I was in awe! I love puff pastry….from Albert Heijn! I haven’t quite worked up courage yet to ever make it! Some day soon…maybe
It’s truly the effort that counts, and besides, I’d rather have palmiers than vol a vents any day!

Puff pastry is something I find difficult too, and it takes so much effort to make.
I haven’t even tried making it as a gf-version, the regular one is so difficult, that I think it would be really hard to make decent gf puff pastry ๐
Your palmiers look sweet and crunchy. I’d love to pop them into my mouth like popcorn:) I’ll have to try some with my leftover dough in the freezer!
